Where tradition meets pleasure
Syrian cuisine is naturally rich in vegetarian and vegan dishes - this is not a modern invention, but deeply rooted in our culture. Two reasons have shaped this tradition for centuries:
In Christianity, there are numerous periods of fasting throughout the year - in addition, meat is traditionally abstained from every Friday. This spiritual practice has resulted in a cuisine that is free from animal products, yet full of flavor and sophistication.
Syria lies on the Mediterranean and is criss-crossed by numerous rivers and streams, which make the country exceptionally fertile. The coastal regions and the vast plains between the Euphrates and Tigris rivers are a veritable paradise for vegetables, pulses and fruit. This abundance has given rise to a cuisine that sees vegetables not as a side dish, but as the star of the plate.
The most popular meat in Syria is lamb - and as we all know, lamb is also vegetarian. This brings our plant-based tradition full circle.
